I LOVE cobb salads.. and salads in general are great for Spring and Summer. If you are celebrating Easter this weekend and need a salad, I highly recommend this recipe I have developed over the past few weeks:
Steak Cobb Salad
Chop & Layer the following:
- Romaine Lettace
- Cooked Steak Pieces, I use Soules steak fajita packages
- 1 Red Bell Pepper
- 1 Roma Tomato
- 1/2 Red Onion
- 1 Avocado
- 2 Hard-Boiled Eggs
- Bacon Bits, I use about four slices of cooked turkey bacon
Chill Salad about 30 min., Toss and serve with dressing of your choice
This salad is so simple and really really delicious. I make a large one sometimes at the beginning of the week and my husband and I eat it at lunch and alongside dinner for a few days. Delicious! Even my two year old loves it 🙂
