My husband and I got to go to Monterey to celebrate our anniversary with good food and a relaxing drive up Highway 1 last week. Being that it was our 7th wedding anniversary Monday, I took some time with my oldest daughter this weekend to bake a few mini cakes. I was inspired by this recipe and had wanted to try a jam filled cake for awhile.
My cakes turned out a bit more “naked” than the ones from Liv for Cake because my husband doesn’t like too much sugar. Overall the cakes turned out so well and they were a lot of fun to decorate! The raspberry jam and fresh raspberries really balanced the sweet vanilla. I will definitely be making this mini cake recipe again!
