Today I thought I would share an oatmeal chocolate chip cookie recipe! Do you ever notice how a long weekend makes for a short week? Long weekends of restful family time and finishing a few big projects have left me scrambling through this week trying to catch up. Well, when all else failed yesterday (as in keeping up with chores and work) I decided to just give in to the chaos and spend a morning making cookies with my little one. We found a great oatmeal chocolate chip cookie recipe and went for it!
This oatmeal chocolate chip cookie recipe turned out to be really easy and it is so fun to bake with my daughter. I usually measure everything out and let her throw it all in and then we watch the mixer together. This recipe was easy because all of the measurements were sequential: 1 cup, 1 1/2 cups, 2 cups etc.

Ingredients:
1 1/2 cups packed brown sugar
- 1 cup butter or margarine, softened
- 1 teaspoon vanilla
- 1 egg
- 2 cups quick-cooking oats
- 1 1/2 cups Gold Medal® all-purpose or unbleached flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semisweet chocolate chips
- 1 cup chopped nuts, if desired
