Avocado Egg Salad:
mix the following thoroughly with a fork and spread onto whole wheat wraps or bread!
- 4 hard-boiled eggs
- 1 large avocado, cubed
- 2 tablespoons mayonnaise or Vegenaise
- 1 teaspoon curry or fenugreek powder
- Pinch of salt and pepper
